Vegan Lentils and chickpea Shepherd's pie

 Hello guys this is LV from LV Cooking today I will tell you how you can make delicious vegan lentils and chickpea shepherd pie in just 30 minutes.

Step-by-step Instructions

 
Heat the olive oil in a 12-inch ovenproof sautés pan over medium to medium-high heat. Cook the onions and carrots until nicely browned, 8-10 minutes. 
 
When they get soft add  1 spoon of soya sauce
 
Add 100ml of vegetable stock and add fresh coriander leaves or any other herb you want
 
Add lentils and chickpeas and let them simmer for few minutes. And if you love lentils check out my Lentils salad recipe.
 
Add 2 spoon of tomato paste and add spices. Red chilli powder, black pepper powder and salt.
 
Cook until all the water is vaporize.
 
In a bowl Add boiled potatoes, salt, black pepper, cheese ( here I have used cheddar cheese if you want you can use which one you like ) and add milk.
 
Mash until they get thick.
 
Add mash Potatoes and on top of vegetables And bake them in a pre heated oven for 30-40 minutes or In a microwave grill them for 20 minutes.
